Here's the truth: nobody comes to Square Peg for "food." They come back for that pie — the one with the blistered crust, the perfect bake, the one that made them stop mid-conversation and say "wait, this is really good." That pie doesn't happen by accident. It happens because someone at the oven treated it like their name was on it. That someone is you.
What you'll actually do:
- Stretch, dress, launch, and turn every pie — by hand, by feel, by the spec
- Own your oven: know the temps, know the bake times, never guess
- Hit dough proofing and par levels cold, every shift, no shortcuts
- Know every build and portion so pies come out consistent — size, bake, toppings, every single time
- Jump on the sauté line when we need you there too — this is a real kitchen, not one station
- Call out 86s and delays to the floor fast, before it becomes their problem
- If a pie's off, you re-fire it immediately — no excuses, no arguing about whose fault it was
- Keep your station and oven area clean as you go — not a scramble at close
- When the kitchen's slammed, you help the person next to you without being asked

You're the type who takes real pride in a good dough and a clean bake — not someone who sees pizza as "just assembly." You hold your standard when it's slow and you hold it when it's slammed; the rush doesn't get to be your excuse. You're a self-starter — we don't want to babysit your par levels or explain the same spec twice. You've got real kitchen experience, you can move between stations, and you own your mistakes instead of hiding them. If you believe every pie leaving that oven is going out to someone's table — because it is — you'll fit right in.
